What a great weekend!


Does anyone else have trouble with Blogger sometimes...I actually posted this yesterday, but it didn't post? It could be me just struggling :) Anyway...enjoy!

John actually got some time off - which is a miracle, we celebrated our friend Monica’s birthday, John got to go snowboarding, we had a relaxing day at the spa getting massages, and of course in the midst of it all - we made some yummy food!

We kicked our weekend off with Monica’s birthday party. We went to a restaurant that we had not been to before called Vinto in downtown SLC. It was really good and really inexpensive. John and I ended up sharing two appetizers and a pizza (which is ultra thin crust - my fave) and it was something like $25-$30. We definitely will be going there again. Here are some pics from the night - people shouldn’t let me take the pictures though because I seem to cut people’s heads off :)


On Saturday, John headed up to Snowbird with his brother. It was super windy at the top - here are a few pictures:


Saturday night, we decided to make Thai food again (I have a feeling now that I have a sticky rice maker I will be making Thai food a lot!). Anyway, instead of just Thai BBQ beef, I decided to make some Chicken Satay with spicy peanut sauce also. It was really good!


I started with Tyler Florence’s recipe here and made a few modifications to the marinade - I made the peanut sauce exact though. Here are my changes:
  • I used coconut milk instead of yogurt
  • I used chicken tenders instead of breasts because they are the perfect size already and you don’t have to cut them up
  • I added some chili sauce to give it a kick (2 big scoop full’s)

Sunday we woke up and made huge omelets - well, they were more like frittatas because I didn’t fold them and I didn’t flip them either. I haven’t quite mastered the flip part in omelet making - and I am not so sure I ever will. 


To make these, I sauté my fixings (onion, green pepper, ham, sausage, mushrooms, spinach, cheese - any combination of these items will do), add in eggs that have been beaten, let cook for a bit, then throw under the broiler to finish them off (my mom taught me that trick and it gets the job done, so you don’t have to flip).

After breakfast and some time to relax, we headed to the spa to get massages. They were much needed, although I seem to be much more sore today! It was nice to just lay there and be pampered. Awwwww relaxation! See…don’t we look relaxed :)


After massages, we came home and I whipped up some chicken cacciatore. I ran across this recipe by Bobby Flay a few days ago - so I went with it.


The only modification I made was using boneless skinless chicken breasts - just to make it slightly healthier. It turned out pretty good, but I would definitely make some modifications next time. I’ll keep you posted.
