Well, now that it is the end of February/first of March, Mother Nature has decided it is a good time to snow. I think she has been confused this year, but hey, I have enjoyed the non-snowy weather.
In honor of it snowing, I was thinking we needed to grill. It just sounded like a good idea! AND when we grill, that means John cooks. I needed a little break.

We had some yummy grilled chicken, garlic rice, and my favorite - artichokes.
This meal is super easy…just season up your chicken with your favorite seasoning and throw it on the grill (BBQ, whatever you want to call it). Watch it closely and turn several times to assure it doesn’t burn. I would say leave thighs and legs on for about 12-15 minutes total - breasts are larger (get your mind out of the gutter), so maybe 18ish minutes. Note: If you are using boneless skinless - it takes less time. The artichokes are cleaned (remove the pokies and the choke), them steamed for about 40 minutes. And last, but not least, the garlic rice is...well, a secret! I don’t even know how John makes it as good as he does or else I would share.
If it continues to snow, I am going to have to boycott and have a pool party or something. Well, maybe not, but I could decided to grill it up again! :)
