Cajun Chicken Sandwiches or just Cajun Chicken
John and I go to this restaurant in SLC called the Bayou quite frequently. They serve Cajun food and have about every beer you can think of on their menu…Bonus! On the weekends, they always have bands playing, which makes it even better!
John orders the same thing every single time we go to the Bayou, which is the Cajun Chicken Sandwich with all white fries - they normally do half sweet potato and half white, but John hates sweet potatoes and so do I. He loves this meal though and I love it because he always gives me a little bite and the pickle (they have really good pickles!!).
Since I have an obsession with trying to recreate things, I make these sandwiches on a regular basis. The main difference between our version and their version is that ours are grilled and theirs is fried. Don’t be fooled though…they are just as good grilled!

- One chicken breast per person
- Salt and pepper
- Cajun seasoning
- Cayenne pepper (I use this because I like it hot)
- Provolone Cheese
- Buns
- Lettuce, tomato, and avocado
- Mayo - optional
Generously season your chicken breasts with salt and pepper, Cajun seasoning, and cayenne pepper on both sides. Let sit for at least 20 minutes. You can season them then let them sit in the refrigerator overnight if you would like. Heat up your grill and grill your chicken breasts (you could also cook them in a frying pan as well). Top with cheese. Serve on a bun with Lettuce, tomato, avocado and mayo (optional).
If you aren’t into buns (my anaconda don’t want none unless you got buns hun:), which I really am not - then leave it off. Tastes just as good!
