Wow! What a Weekend

This weekend was a lot of fun...well, for me anyway. John had to work again. 

On Friday, I got an itch to make some Thai food. I really love Thai BBQ Beef and thought hey, why not recreate it. Here are some pics...recipes to follow:

Thai BBQ Beef
Thai Pickles - My sister and I learned how to make these at a cooking class - they are delicious!




Sauteed Garlic and Ginger Bok Choy - I needed an Asian-y veggie  
Thai BBQ Beef Marinade - makes enough for two steaks (I used large rib eyes)
  • 3 tablespoons Soy Sauce
  • 1 - 1.5 tablespoons oyster sauce
  • 5 cloves of garlic minced
  • 1 - 1.5 tablespoons of brown sugar
  • Pepper to taste (you won't need salt due to the soy sauce)
Mix all ingredients and dump over beef. Let marinate for at least an hour, but up to 24 hours. Grill your meat over high heat to your liking. Slice then and serve with sticky rice and the following dipping sauce.

Thai BBQ Beef Dipping Sauce
  • 6 tablespoons fish sauce
  • 6 tablespoons lime juice
  • 1/4 of an onion diced
  • 3 cloves of garlic minced
  • 1 bunch cilantro chopped
  • 3 - 4 green onions sliced
  • 2 tablespoons brown sugar
  • 1 to 2 tablespoons Thai Garlic chili sauce (you can use something like sriracha for this)
Mix all ingredients and refrigerate for at least an hour before use.

Sticky Rice
I had to call my sister for help on this one - turns out it is actually really easy to make.  Yes, the contraption to make the sticky rice is a little scary - but it is seriously very easy. Soak the rice (either glutinous or sweet rice found at the Asian market) in warm water for 3 to 4 hours. If you soak in cold water - it takes more like 12 hours. Add water to your pot (two to three inches), bring to a boil. Place the basket/hat looking thing over the pot. Dump in your rice then cover with a pot lid. Steam for about 20 minutes. While it is steaming, stir several times to assure even cooking.

Moving on...Saturday day, I got to make some crafts and organize my closets. Boy was it nice to get that done.

Then Saturday night, I made some Chile Verde. I used the recipe found here. The only thing I did different was added additional canned chilies.



After dinner, John and I went out with a couple of our friends. It was pretty fun, but I am just getting too old to stay out late :) I would much rather stay at home and watch movies.



Yesterday, I spent the day shopping, eating brunch, etc. Then last night, I made a fancy shmancy seafood dinner complete with grilled lobster, grilled shrimp, and scallops! YUM! And it looks so pretty!


Since I am off work today and I had a busy weekend, I have just been relaxing. I did get some running in, and it was freezing! Cold, cold wind.
