I LOVE Pinterest. I mean, I love it! In fact, one could say that I am addicted to Pinterest. I am always finding some good idea on there. The easiest for me to execute are obviously the recipes. I have found a few projects that I would like to do sometime, but for now, I will stick to the recipes.
The other day while I was Pinteresting (yes, it is a verb), I stumbled across a recipe for Chicken Florentine soup. I was really intrigued by it because it had fresh spinach in the soup. It isn’t often that you see spinach in soup - well, at least not too often for me - so I had to try it. You can find the recipe here.
I am not good at following recipes. I just can’t do it. It is just not in my blood to follow directions verbatim. I wonder who I got that stubborn streak from? Anyway, I basically used the same ingredients - although the only thing I did actually measure was the cream. I added in some sliced up mushrooms for good measure, I used this cute little wheel pasta that I found, and I am pretty sure I used more red bell pepper since I diced up an entire pepper (this gave it way good flavor though - almost like a red pepper based broth). It turned out awesome, but mine did look creamier than the photo on the blog. That might mean I didn’t use enough chicken broth, but it was still yummy! In fact, the next day I brought the leftovers to work and everyone commented on how stinkin’ good it looked and smelled.
I served this with a nice big chunk of garlic bread with cheese. Mmm! I can’t wait to make it again. I will give one little plug to Pinterest though…if you aren’t using it, you should be! It is fantastic.
