I bet you guys didn’t know that I could cook healthy, did you? Good news, I can. I find myself craving some sort of fish quite often. It’s still weird to me because I grew up eating fish, then I hated it for a while, and now I like it again. I guess that’s why they always say “your taste buds change.” Since John hates fish and seafood, I usually stuff that craving deep down inside and go for something a little more John friendly. Last night (actually Thursday night - Friday nights are really just my night to relax and not cook), I really wanted salmon and there was just no way of getting around it…I had to have salmon! To make John happy, I got him a steak. A big hunk of red meat always makes John happy. I like my salmon blackened and I have these little cedar wrappers that I think work perfect on the grill. Basically, it is a thin (very thin) piece of cedar that you soak in water, then wrap around whatever it is you are cooking. It is the baby version of the cedar plank. And much quicker since you only have to soak these for 10 minutes versus a minimum of an hour with the cedar plank.
Here it is…in all its glory! The edges hanging out of the wrapper may have gotten a little toasty. It was really yummy though…cooked to medium in the center. MMM!
This is very easy to prepare. Wash your fish, then pat dry. Generously season with your favorite blackening seasoning, salt and pepper, and olive oil. Wrap in a cedar wrapper and grill for 5 to 6 minutes on each side. Remove the cedar wrapper, and there you have it.
And of course, John’s steak.
I also made some roast veggie cous cous. It turned out pretty good. I got the recipe here: http://budgetbytes.blogspot.com/2011/08/roasted-vegetable-couscous-1009-recipe.html. I did make some modifications though including cutting the veggies to size to begin with, versus cutting them once and cutting them again after roasting. I also minced the garlic from the get go using a garlic press.
Well, there you have it. I do know how to cook healthy after all. Maybe I will try it more often!
